In the glory days of the American mall, you were likely flipping a coin with your friends to decide between Panda Express and Sbarro. But as retail has changed, so too has the restaurant scene, per CNN. While we’d be lying if we said anything could top a warm Auntie Anne’s pretzel, today’s mall food is not only upping the quality — it’s also increasing the square footage. Restaurants have broken out of the food court, with the total mall space dedicated to food amounting to 15%-20%, up from 5% in the ‘90s. And the restaurants themselves are changing, too. Local chains, global cuisines, and entertainment dining concepts are moving in, attracting shoppers to restaurants as the main attraction rather than an afterthought. Given that ~150 enclosed malls have shuttered in the US since 2008, this restaurant resurgence might be just what the landlord ordered.

https://lnkd.in/eWRVAsfM - An interesting storyline here for the winter break, as to whether the Pret a Manger coffee and sandwich shop brand will succeed in Israel. My take on it is, if the chain is rolled out in small units, strong locations, airports, train stations and busy office conurbations, and if the quality of quick service and fresh product is good enough to differentiate it from other brands such as Cafe Cafe, Cofix, Aroma etc, then it could do well. That said, Israel does not have a strong grab&go or sandwich culture like the UK, and Israelis like a 'proper' meal at lunch, so the brand might need to adapt quite a lot to succeed in the Land of milk and honey. #Israel #coffeeshops

As price-conscious Americans cut back on eating out, fast-casual restaurants are bucking the trend and continuing to attract consumers. This is notably the case with buzzy Mediterranean chain CAVA. The eatery has been rapidly expanding its number of locations and plans to offer steak next month — a move that led the company to boost its full-year sales outlook. CAVA expects same-store sales of 6.5% for the year, up from 5% previously estimated. It opened another 14 restaurants last quarter, bringing its total to 323. After a recent opening in Illinois, CAVA is now open in 25 states and Washington, D.C.

Malls are seeking more unique restaurant concepts to draw foot traffic than QSRs and the once ubiquitous lifestyle restaurant names like TGI Fridays, Ruby Tuesday, Applebee's Neighborhood Grill + Bar and Chili's. Quick-service restaurants in food courts are fleeing the mall to freestanding drive-thru locations, a post pandemic trend that’s not going away. Drive-thru sales hit $133 billion in 2022, an increase of 30% from 2019 pre-pandemic levels, according to Technomic, Inc., a restaurant industry consulting firm. Another research firm, Revenue Management Systems (RMS) reported that drive-through sales account for two-thirds of QSR revenue. Net drive-through sales were up 25% in the first half of 2023, compared to the same period in 2019. So what’s replacing QSRs and the typical lifestyle restaurant in malls? There’s a new guard in malls,” according to Chris Simms, CEO and founder of Lazy Dog Restaurant & Bar, which operates around 50 ski lodge-themed restaurants around the country. People want to experience something different than the typical burgers, chicken and pizza places, according to David Kim, co-CEO of Gen Korean BBQ House. Gen has 40 restaurants with plans to grow to 250. Customers order raw meat to their tables and cook it themselves. Food and entertainment extend the duration of the mall visit but landlords have to be creative in finding unique and different tenants to enhance the experience.

Looking for a bite at your local mall? As US malls race to reinvent themselves, they’re turning to sushi conveyor belts, craft-beer membership clubs and Korean barbecue to replace burgers and fries. Over the last few decades, malls became the town center of many American communities. But the pandemic, over-building and a move by consumers toward discount and online shopping changed all that. As anchor department stores left malls, so did some name-brand chains like Ruby Tuesday, Chili’s, Applebee’s and others. What’s taking their place illustrates a large shift in US tastes: There’s a boom in smaller and regional restaurant chains with a local following. Plus a much wider menu of global cuisines. Landlords are counting on emerging restaurant brands like Lazy Dog, Gen Korean BBQ and Postino Wine Café to draw customers back to malls. So-called “eatertainment” concepts such as Puttshack and Topgolf, which can extend the amount of time people spend in a mall, are expanding. One fast-growing chain targeted to families, Kura Revolving Sushi Bar, delivers plates to diners on conveyor belts as rolling robots serve drinks. Tableside monitors offer games, cartoons and toy prizes for big eaters. And at the same time, many national chains are prioritizing drive-thru locations over their sit-down restaurants in malls.

For most us, the need to remain profitable is non-negotiable. At least twice in its history, Red Lobster, a seafood restaurant chain in the US, has lost big money with "all you can eat" offers. Customers LOVED it! The CFO? Not so much. "Red Lobster reported a loss of $11 million in the third quarter of 2023, primarily due to an “Ultimate Endless Shrimp” promotion it offered last summer, in which customers would pay $20 for endless shrimp. The menu item had previously been a limited-time offer, but Red Lobster decided to make it permanent. The restaurant then attempted to up the promotion price to $25, but that reportedly did not help with the losses." #product #productmanagement #prodmgmt
