I LOVE fritters. They’re so versatile, you can have them for breakfast or dinner, and they’re absolutely delicious! This sweetcorn fritter recipe makes 9 and only takes 10mins to prep and 10mins to cook. Here’s what you’ll need: 170g sweetcorn, canned, drained 2 spring onions, sliced handful coriander 4 tbsp buckwheat flour ½ tsp paprika 2 tbsp olive oil 1 tbsp water 1 tbsp lime juice Add 3/4 of the sweetcorn, spring onions, coriander, flour and paprika, half of the olive oil, water and lime juice to a food processor. Season with salt and pepper and blend until chunky. Stir the remaining sweetcorn into the mixture. Heat the remaining oil in a pan and scoop in the mixture (about 2 spoonfuls per fritter). Cook on medium heat for about 5 mins each side, until golden brown. Let me know if you'll be trying this recipe in the comments section below!

During the session children are firstly invited to talk about their favourite foods, fruits and vegetables before exploring different recipes and having a choice with what they would like to make. This cold weather has made me think about the foods that bring me comfort. Paneer in its many forms is definitely one of these. Have you tried paneer? It is a type of cheese that, when cooked in a masala or coated with a marinade and fried, can be heavenly. However, one thing that I hear people say about paneer is that it can be hard. Well, I have a tried and tested method to avoid this... Place the fried paneer (whatever shape you cut it) into a bowl of boiling water... then, when ready to add it in, just place it in to your masala sauce. You can even use some of the water, too. Learning these little extras is what Cook Eat Joy classes are about. The seeing, the smelling, and the tasting in person make the difference to the learning process.
