All parts of the dandelion plant are edible, including the roots... which taste a lot like coffee once they're roasted. This week, I decided to get a bit crafty in the kitchen and I adapted a chocolate pudding recipe by adding in some dandelion root powder. The resulting pudding tasted like a mocha latte and it was a huge hit (and caffeine-free too!)
