Billions of chicken nuggets are consumed each year, but when it comes to fish nuggets, the few that are in the market are typically made from whitefish. Trident Seafoods is testing a new salmon nugget that it hopes will resonate with school foodservice operators across the country. If successful, it could open up opportunities for the product in the broader foodservice sector, as well as retail, and even with the US Department of Agriculture (USDA) food assistance program.
