Meal consistency at high altitude can be a huge headache for airlines working to deliver a premium food service experience. In Datassential's airline trendspotting report, chef and VP Culinary Service Sean Wheaton shares his thoughts on why you need to call in the experts for airline catering. "Between the altitude effects on our senses and the dry air of the cabin, some natural flavors are dulled, but others like bitterness can have an outsized impact. So items with subtle flavors can easily be overwhelmed, while on the opposite end, pungent aromas can end up offending half the flight. It’s a delicate balance the culinary team has to strike." Learn a few fun facts about our Russian-born team member who keeps our brand looking sophisticated and polished. 💁🏼♂️ Began his food career at 17, moving from waiter to general manager and co-founder of a chain of health food cafes in Russia. 🕺🏼Was a professional break dancer in his youth. 🍗 Brought the sous vide method to Saint Petersburg, Russia, showing the fitness community that chicken breast could be juicy and tender. 🛬 Moved to the United States in 2022, inspired by his peers who had moved abroad to pursue their dreams. 🏋🏼♂️ Enjoys fitness and traveling in his free time. 💡 Inspired by CSI’s CEO Felipe and his entrepreneurial mindset.
